Ever notice that left over tator tots get really mushy. Sometimes i actually enjoy a reheated mushy tator tot with lots of salt. However most of the time i would rather let it sit in the refrigerator to grow. At some point it struck me that i could make homefries from left over tator tots. If my memory serves me correctly i had this thought while i worked in a coal testing laboratory. I believe i was suppose to be operating a sulfur analyzer but found more enjoyment in loafing. I thought hey i wonder if i could use reheat tator tots in home fries. Some time later that's exactly what i did. Been doing so for some time and it's a pretty damn good meal.
I'm not going to cite a damn recipe but i will give a general idea of how to make my home fries. You need diced green pepper and onion, some butter and a little course ground pepper. While that is frying make some scrambled eggs. Add it all together and you have my homefries.
Also the picture above doesnt have the eggs.When i'm not slacking,loafing or generally taking it easy i may fix that.
